This wine takes its name from the San Zeno area south of Aldeno. It is a traditional blend of Cabernet and Merlot grapes harvested at the right time and carefully selected. Vinification is carried out by leaving it to ferment in contact with the skins and must for quite a long time; it is then aged in oak barrels for a period varying from one to two years. San Zeno is a ruby red wine full of orange reflections; the aroma is delicate, fragrant and has spiced yet ethereal elements. The taste is decidedly dry, well-structured and well-bodied and pleasantly tannic. It can accompany roasts and game in particular, especially if coke with aromatic herbs. Best served at a temperature of 18 -20°C.
